Tempeh Scramble Wraps

400 g tempeh, crumbled
4 teaspoon olive oil
1 red pepper, seeded and diced
2 jalapeno peppers, seeded and minced
3 medium onions, diced
2 garlic cloves, crushed
4 tablespoons spicy or mild salsa
6 eggs, scrambled
1 bunch coriander, leaves picked
8 soft tortillas
salt and pepper


Stir fry the tempeh in the olive oil until slightly browned. This will take about 5 to 10 minutes. Add the vegetables and continue to fry for another 5 minutes until they become soft. Stir in the scrambles eggs and cook until the eggs are cooked. Bring to taste with salt and pepper. Heat the soft tortillas according to package instruction (in my case it took only 1 minute in the microwave). Fill the hot tortillas with the mixture, put on a plate and decorate with coriander leaves. You can also put some coriander leaves inside the tortilla.
