Tempeh Salad Sandwich

250 g tempeh
1 small onion, diced
1 small carrot, grated
1 celery rib, diced
2 tsp lemon juice
1/2 tsp curry powder
1/4 cup vegan mayo
2 tsp vegetable stock powder
black pepper to taste


Cut tempeh in small cubes steam for 15 minutes. Cool slightly. Mash with a fork.

Mix in the carrots, celery, and onions and stir well.

Sprinkle with lemon juice, curry powder, stock powder and mix well. Add vegan mayo. Season with black pepper.

Serve in pita or on bread.
