Tempeh in Pita Bread

2 tablespoon olive oil
3 garlic cloves, crushed
2 medium onions, chopped
400 g tempeh, cut in small cubes
2 small zucchini, diced
2 medium tomatoes, diced
1/2 teaspoon chilli powder
2 teaspoon ground coriander seeds
1 teaspoon ground cumin seeds
2 tablespoon tomato paste
1 tablespoon tamari or shoyu
1/4 teaspoon cinnamon
salt and pepper to taste
2 tablespoon chopped fresh cilantro


Bake the onions and garlic in the olive oil until onions are soft. Add the tempeh and stir-fry for a few minutes. Add the zucchini, tomatoes, chilli powder, coriander and cumin. Cook for about 10 minutes. Bind with the tomato paste, add the cinnamon, tamari and cinnamon. Bring to taste with salt and pepper. Add the fresh cilantro and serve in pita bread.
