Minestrone Soup 2

2 medium onions, chopped
2 tablespoon soybean oil
2 cloves garlic, minced
1 liter water
6 medium tomatoes, cut in cubes
2 medium carrots, cut in small cubes
1 zucchini, cut in small cubes
1 medium potato, cut in small cubes
1 can of beans
1 teaspoon dried basil
1 teaspoon marjoram
100 ml red wine
salt and cayenne pepper to taste


In a soup pot fry the chopped onion and garlic in the vegetable oil until translucent. Add the water, tomatoes, carrots, zucchini and potato and bring to boil. Simmer for about 15 minutes. Add the beans, basil, marjoram, red wine and bring to boil. Simmer for a few minutes. Bring the minestrone soup to taste with salt and cayenne pepper. Serve the soup immediately.
