Tempeh Sandwich

200 g tempeh, cut in thin slices
1 clove garlic, minced
4 Tbs mayonnaise
1 Tbs parsley, chopped
1 medium onion, separated in rings
8 sliced bread
2 tomatoes
4 lettuce leaves
2 Tbs vegetable oil
1 Tbs vinegar
salt and pepper to taste


In a bowl mix together garlic, parsley and mayonnaise.

Brush the tempeh slices with the vinegar and add salt and pepper.

In a skillet bake the onion in the oil until softened. Remove onion from skillet and set aside.

Add the tempeh to the skillet and bake until crisp and browned.

Toast the bread and spread each piece with mayonnaise. On 4 pieces of bread add the tempeh and on top the onion rings, the tomatoes and the lettuce. Sandwich together with the other 4 pieces of bread. Serve the tempeh sandwiches immediately.
