Curried Rice with Tempeh

200 g tempeh, cut in small cubes, marinated
2 tsp salt
3 Tbs olive oil
1 1/2 cups vegetable broth
1 onion, chopped
1 clove garlic, minced
1 cup brown rice
1 Tbs curry powder


Remove the tempeh from the marinade and steam during 10 minutes. Set aside. Bake the onions and garlic in the olive oil until the onion is translucent. Add the rice, broth, salt and the curry powder and stir. Cover and bake in the oven at 200°C (400°F) for 25 minutes or until most of the water is absorbed and rice is done. Add the tempeh cubes and bake for another 5 minutes.


On this picture we served the curried rice with tempeh on a bed of corn salad.This curried rice with tempeh is easy to make and requires only few ingredients. Instead of baking the rice in an oven you can also cook it in a casserole, but then you must take care not to burn it.
